Vegetarian Filling

(Garlic chive/Mung bean vermicelli/Dried bean curd/Egg)

Ingredients
Garlic chive (diced)2/3 lb (300g)
Egg (beaten)4 large
Mung bean vermicelli (soaked/cut 1.25cm/0.5" segments) 2 bundle
Dried bean curd (cut tiny dices) 1/2 lb (225g)
Tiny shrimp skin (soaked/drained)1/2 cup
Salt2-1/2 Tsp
Sugar2/3 Tbs
Ground white pepper1/4 tsp
Sesame oil 2 Tbs
Cooking oil 3 Tbs

Instructions
1.Place 3 tbs. of oil and eggs in a heated non-stick pan; scramble the eggs until done. Chop the eggs into tiny pieces.
2.Add dried bean curd and shrimp skin to the same pan. Saute until aromatic and all the liquid is evaporated - don’t add oil.
3.Mix all the ingredients in a big bowl until well combined.

白胡椒1/4 小匙
麻油2 大匙
食用油3 大匙

做法
1.不沾鍋燒熱後加入三大匙油,倒入蛋液炒熟。將蛋切成細丁。
2.原鍋加入豆干和蝦皮用中火炒香,不用加油。
5.將所有材料在大碗裡拌勻備用。
